Our Story
Java 101 began with a simple conviction: that Shelton deserved a place where bread is treated as craft, not commodity. We started in a small kitchen with a wood-fired oven and a stubborn refusal to cut corners.
Today, every sourdough loaf, every batch of croissants, and every cup of coffee carries that same standard. We source locally whenever we can, bake in small batches, and never rush what should be done right.

What We Do
Sourdough, ciabatta, focaccia, and seasonal varieties — each baked from scratch using natural starters, stone-ground flours, and techniques that respect the grain. No shortcuts. No preservatives. Just bread, done properly.
Butter croissants that shatter at the touch, pain au chocolat with precise lamination, and seasonal tarts made with what the region offers. Our pastry case rotates with the calendar — because repetition is the enemy of craft.
Single-origin espressos, carefully curated loose-leaf teas, and a selection of artisan groceries — olive oils, preserves, and pantries staples from Pacific Northwest producers. Everything we sell, we'd serve our own guests.
